Line a grill pan with foil and sprinkle over the oatmeal and sugar. Grill for 2 minutes until the sugar has caramelised, watching carefully all the time so it doesn’t burn. Allow to cool and break up into crumbs. Whip the creams together until thick, then stir in the honey and liquor. Stir in the toasted oatmeal. Reserve 8 blackberries for decoration. Mash the remainder with a fork. Divide half the cream mixture between 8 glasses and top with half the mashed blackberries. Spoon over the remaining cream mixture, then finish with a layer of the blackberries.

Hey Fun!
Thanks for these! These sound BOFFO - they would go over sooo well well in my house. I'm going to give these a test drive. I've been looking for an excuse to experiment with phyllo pastry. I was going to give spanakopitas a try (always trying to use up baby spinach), but the prawns sound fabulous and much more along my line. Cheers! FF
